Our story

We are Nathalie Mirabel and Louis Gely, farmers' children, born on the slopes of the Aubrac. Both hunters. Passionate about the Laguiole knife for as long as we can remember.

Nathalie has been selling Laguiole knives here for more than twenty years. Louis did his first seasons in the same shop, before going off to work elsewhere for a few years.

Then he came back home. We got back in touch and decided to set up on our own, to keep the story of this farmer's knife alive and to honour the Aubrac land it was born in.

The rue Bardière premises had been empty for almost four years. They became free at the right moment. The second shop followed, opened in the spring.

The Laguiole was not designed for display cases. It is a working knife, born in the pockets of the Aubrac farmers, to cut bread, bacon and rope. That is the one we want to put in every pocket: knives that are used, made by people we know.

We work with four craftsmen: Laguiole en Aubrac, Jérôme Lamic, Robert Cécon, Alexis Jean.
