Walnut is the understated choice. Warm brown, deep and even grain. It is the wood of French furniture and gun stocks, and the one people ask for when they want a noble, rustic knife.
A forged bee, not an added one:
The bee is the small piece at the top of the spring. On this knife it is forged from the solid: the same piece of steel as the spring. On entry-level knives it is made separately and welded on, which is quicker and cheaper, and it shows at the joint.

Care:
Wipe the blade after use. Never in the dishwasher, never soak it: wood likes neither water nor heat. Once or twice a year, a drop of food-safe oil rubbed into the handle with a cloth is enough to feed it, and a drop of fine machine oil in the joint keeps the opening smooth.
